Directions

  • Preheat oven to 425F

  • In a large bowl, combine the oil, mustard, honey, garlic, spices, and salt.

  • Add the chicken thighs to the bowl and mix to coat each piece well.

  • Place coated chicken and onions in a large cast iron skillet, pouring any extra sauce over top.

  • Bake for 25-30 minutes or until chicken thighs are fully cooked through and internal temperature reads 165F.

  • Enjoy!

1/4 c canola oil

1 Tbsp Dijon mustard

2 tsp honey

6 minced garlic cloves

1 tsp ground coriander

1 tsp paprika

1/2 tsp black pepper

1/2 tsp cayenne pepper

1/8 tsp kosher salt

1.5 lbs boneless, skinless chicken thighs (8 pieces)

1 large quartered and sliced yellow onion
